There’s something about this time of year that makes us want to linger a little longer—and luckily, it’s perfect patio season at The Lark.


The days are warm, the evenings are beautiful, and our calendar is full of reasons to get together. From a special wine dinner featuring delicious food and thoughtfully paired wines, to live music, new pours, seasonal favorites, and plenty more on the horizon, there’s always something happening at The Lark.

It’s the perfect time to grab a seat on the patio, order a glass of something you love (or let us pour you something new), and settle in with good food and even better company. Whether you’re planning a night out, looking for something fun to do with friends, or simply need an excuse to slow down and enjoy the season, we’ve got you covered.

Kila Cava — A Little Sparkle with a Lot of History

From Penedès, just southwest of Barcelona, Kila Cava is a beautiful example of the fresh, food-friendly style of sparkling wine that has made this corner of Catalonia famous. Produced by Vins el Cep, Kila is a blend of three classic Cava grapes—Macabeo, Xarel·lo, and Parellada—selected from the winery’s estate vineyards.

What makes Vins el Cep particularly special is its family story. The winery is a partnership of four longtime Penedès winegrowing families—the Carreras, Masana, Parera, and Esteve families—who came together to preserve their vineyards and make wines that reflect their land. Their individual estates have remarkable histories, with some of the properties dating back hundreds of years. Can Castany, for example, was established in 1448, while Can Prats traces its vineyard history to the 14th century.

The families are also deeply committed to sustainable farming. Vins el Cep was a pioneer in organic and biodynamic Cava production in Spain, and Can Castany is certified biodynamic. The winery works exclusively with its own estate-grown fruit, allowing the families to maintain control from vineyard to bottle.

Kila is made using the traditional method, the same basic bottle-fermentation process used for Champagne, and spends approximately 24 months aging in bottle. That extra time gives the wine a fine, persistent mousse and adds subtle complexity while keeping the overall style fresh and approachable.

In the glass, expect bright citrus, green apple, pear, white flowers, and a lovely mineral character, with crisp acidity and delicate bubbles. It’s refreshing enough to sip on its own but has enough structure to shine with food.

It’s fantastic with oysters, shrimp, ceviche, sushi, crudo, and other seafood, but its lively acidity also makes it an excellent partner for charcuterie, soft and fresh cheeses, olives, tapas, fried foods, salty snacks, and lighter summer dishes. The bubbles are particularly good at cutting through richer or fried foods, while the mineral-driven freshness keeps the pairing bright.

Kila is the kind of Cava that makes you want another glass—fresh, elegant, wonderfully food-friendly, and backed by generations of families who believe great wine starts in the vineyard. Perfect for a sunny afternoon on the patio or the first pour of a long evening at The Lark.
